Dear readers, are there any special food items or dishes (recipes) that you consider to be “comfort meals” or use expressions like “soul food”? Technically, soul food is an ethnic cuisine traditionally prepared and eaten by African Americans in the Southern United States. However, I am writing more about emotional connections rather than the literal meanings of these terms. Comfort meals serve not only as a source of nourishment but also as a form of emotional and psychological support, providing a moment of solace and satisfaction in times of need.

The term “comfort meal” is used to describe certain foods that evoke feelings of warmth, nostalgia, and emotional well-being when consumed. Sandwiches are one such thing that I am obsessed with because it brings back my childhood memories. When maa used to visit Nani’s place leaving us three sisters at home, this used to be our quick-fix meal.

With just bread and some ingredients, one can create umpteenth options to fill their tummy with health as well as taste. Being a mom of two time is always a constraint and these sandwiches are my go-to option for evening snacks or breakfast.

I always look for recipes that can be made quickly and have high nutritional value. Today’s recipe is one such quick-fix meal that will satiate your hunger and your taste buds will love it too.

Spinach-corn Sandwich

Ingredients:

Multigrain bread – 2 pieces, Spinach – Boiled and pureed (50gm), Corn- Boiled (50gm), Hung curd- half cup, Mozzarella cheese, Salt & pepper, Chilli flakes, butter, tandoori mayonnaise spread (optional)

Cooking time: 15 minutes

Cooking process:

Mix spinach, corn, and hung curd in a bowl, add salt, pepper, and chili flakes as per taste. Take two slices of bread, spread the mayonnaise, and then generously spread the spinach mixture. Add the Mozzarella cheese on top, apply butter on both sides of the sandwich, and grill it for a minute or till it is golden brown for crispiness.

Enjoy it with a warm cup of tea/coffee!
