Dear readers, the summers are at their peak in this part of the world. We keep a look out for recipes that keep us cool and won’t take much time to make. One such recipe I found on the net is a rave on the internet and prepared by a Bollywood actress Alia Bhatt. This recipe has curd and beetroot both are my favorites.
Curd acts as a great probiotic for our gut. The good bacteria present in curd help to clear out the digestive system. Not only that it also improves our gut activity. Beetroots are rich in folate (vitamin B9) which helps cells grow and function. Folate also plays an important role in controlling damage to blood vessels, which can reduce the risk of heart disease and stroke.
Ingredients
250gm Curd, One cup grated beetroot, black salt, green chilies, chopped onion, and coriander leaves. For tempering, one teaspoon mustard oil, mustard seeds, hing, curry leaves, and cumin seeds.

Mix curd, beetroot, chopped onion, and green chilies in a bowl. Add salt and mix well. Heat the tempering pan and add mustard oil. Once the oil is a little hot add mustard seed, cumin seeds, and hing. Take it down from the heat and add curry leaves. Pour this on your bowl of curd mix and garnish it with coriander leaves, ta-da!
The color of this dish would be beautiful pink and the taste is absolutely delicious. Do give this a try 🙂

I make the raita same way, just in tempering I use white sesame seeds also. It tastes amazing. Your close up photo of the beetroot is amazing.

Beetroot raita is something I have never tried. I am surely going to try it tomorrow. Beetroot is super healthy and I eat it every day as salad. Will use that for the raita. Your raita looks so cool and refreshing.
Your recipe looks good but I don’t like beetroot, perhaps my parents-in-law would like it.
